As summer is quickly coming to an end and the weather is beginning to change, one of my favourite things to eat is a hot bowl of soup with a piece of freshly baked bread. Lewis is the cook in the relationship. He is a natural in the kitchen. He’s cool, calm and collected when it comes to hot stoves, sharp knives and spices! I, on the other hand, am a STRESSED out mess! The only thing I bring to the table is cleaning… and the occasional stir!
QUICK SPICED CARROT & LENTIL SOUP RECIPE
Lewis found this soup recipe on BBC Good Food. It was super quick to make and took less than 30 minutes to prep and cook!
What you’ll need…
2 Tsp Cumin Seeds – We used ground cumin
A Pinch of Chilli Flakes
2 Tbsp Olive Oil
600g Carrots – Grated
140g Split Red Lentils
1 Vegetable Stock – Hot
Quick Spiced Carrot & Lentil Soup
This soup was DELICIOUS. It had just the right amount of spice, there was a nice kick to it and the texture from the blended lentils was perfect, making the soup thicker. We used a pre-packaged bread mix for ease and made a lovely, warm loaf of bread to pair with it.
